I had four lovely ladies to my cookery class this week.
Our focus of the day was `Japanese home cooking´& ´No-sushi´Japanese dinner.
Here are the dishes we made together…
Stir-fried lam & tomato on rice, rolled chicken with beans & carrot, Miso-marinated salmon & scallop,
Chicken & leek in Dashi soup & pickles
We began with welcome drinks and 2 tasting dishes while I explained today´s menu.
Fig and Tofu dressing, and grilled aubergine with ginger.
In the lesson, I also showed how to make `dashi´, which is a Japanese-style soup stock.
It is made of bonito flakes and dried kelp (konbu).
Dashi is a heart of Japanese cooking and those who have tasted miso soup, they know it!
But normally people don´t know how it is made so it´s always fun to show this part of Japanese cooking.
I used dashi for `chicken & leek in dashi soup´.
Apart from my monthly `Skandi Cooking´ classes, I also arrange Japanese cookery classes upon request.

There are more and more Japanese ingredients available here in Norway so easier for people to try it out!
`No Sushi´ cookery class was very successful!
